Banana Walnut Tea Bread
A healthy alternative snack ideal for morning tea, entertaining, and great for the kids lunch.

oil to grease tin
75 g of dates, chopped
50 g butter, softened
2 bananas, mashed
squeeze of lemon juice
100 ml milk
75 g walnut, chopped
75 g brown sugar
1 egg, beaten
225 g self raising whole meal flour

Directions:

Preheat oven to 180 °C (gas 4). Lightly grease a 500 g loaf tin.
In a large saucepan, heat 100 ml water with the dates and bring to a boil. Remove from the heat and mash the dates roughly. Mix in the butter.
Stir in the bananas, lemon juice, milk, walnuts, sugar and egg, and mix until completely blended.
Sift in the flour and mix well.
Pour the mixture into the prepared tin and bake for about 1 1/4 hours, or until a skewer inserted into the middle comes out clean.
Cool the tea bread in the tin.
