Ingredients:
800 g beef steak, trimmed
1 large red bell pepper, sliced
1 large green bell pepper, sliced
1 large yellow bell pepper, sliced
2 large red onions, sliced
26 small flour tortillas
3 cups iceberg lettuce, shredded
1 1/4 cups cheddar cheese, grated
3 medium tomatoes, seeded, diced
2 medium red onion, chopped
1 tablespoon jalapeno chilies, minced
1/4 cup coriander, chopped
1 tbsp lemon juice
Directions:
Heat large, lightly oiled, grills plate. Sear beef on both sides until browned and cooked as desired.
Cover; stand for 10 min. Slice thinly.
Meanwhile, on the same grill plate, cook bell peppers and onions, in batches, until vegetables are browned all over.
Heat tortillas in microwave oven or in pre-heated oven according to instructions on package.
Divide beef slices and vegetables among tortillas on serving plates.
Top each with lettuce and cheese; roll to enclose filling. Combine tomatoes, red onion, jalapeno chilies, coriander and lemon juice in a bowl, serve separately.
