Ingredients:
2 slices white or brown bread
25 grams butter
2 rashers beef bacon, chopped
1/2 large cos lettuce
60 grams blue cheese, crumbled
1/3 cup walnuts, chopped
1 egg
1/3 cup olive oil
1 tablespoon lemon juice
2 anchovy fillets
1 teaspoon mustard
Directions:
Remove crust from bread; cut bread into 1 cm cubes. Melt butter in frying pan. Cook bread cubes until brown; drain on absorbent paper.
Add beef bacon to pan. Cook, stirring, until brown; drain on absorbent paper.
Break lettuce into bite-sized pieces. Combine in serving bowl with bread cubes, beef bacon, cheese and walnuts; toss well.
To make dressing, gently lower egg into simmering water; cook for 1 minute and remove. Break egg into a blender or processor. Add oil, lemon juice, anchovies and mustard; blend until smooth. Pour over salad just before serving.
