Ingredients
1 cup bread flour, sifted
1 teaspoon mustard powder
2 teaspoons baking powder
1 teaspoon salt
1/2 cup whole-wheat flour
1/2 cup oats
150 grams Cheddar cheese, grated
1 egg, beaten
1 cup sour milk
1 tablespoon olive oil
Directions:
Sift together bread flour, mustard powder, baking powder and salt.
Add whole-wheat flour, oats and 100 grams of
the Cheddar cheese.
Mix the egg with the sour milk and the olive
oil, and add to the above dry ingredients. Mix to a soft consistency.
Pour into a 25 x 10cm bread tin. Sprinkle the
remaining cheese on top and leave to stand for 10 minutes. Bake at 180ºC (Gas
mark 4) for 40-50 minutes or until baked through. The flavor improves if it is left
to stand for one day.
