Ingredients:
2 cups chicken, cooked, shredded
1 clove garlic, minced
2 tablespoons olive oil
2 cups French bread, cubed
1/4 cup olive oil
2 tablespoons vinegar
1 tablespoon lemon juice
1 clove garlic, minced
1 teaspoon anchovy paste or 2 anchovy fillets
1/2 teaspoon Worcestershire sauce
6 cups cos lettuce, shredded
spring onions, sliced
1/4 cup Parmesan cheese, grated

Directions:
In a pan over medium heat, cook garlic in the 2 tablespoons olive oil until golden. Add cubed French bread, stirring to coat evenly. Transfer bread cubes to a shallow baking pan. Bake in a 150°C (Gas 2) oven for 10 minutes. Stir. Bake about 5 minutes more or until the cubes are dry and crisp.
In a blender combine the 1/4 cup olive oil, vinegar, lemon juice, garlic, anchovy paste, and Worcestershire sauce. Cover and blend until smooth.
In a large salad bowl combine lettuce, chicken, green onions, Parmesan cheese, and garlic croutons. Pour the dressing over the salad. Toss gently and serve immediately. Add pepper.
