Ingredients:
500 grams chicken breast
1 teaspoon cayenne pepper
1/2 teaspoon cumin seeds
1/2 teaspoon oregano
1/2 teaspoon Thyme
1 teaspoon garlic, mined
salt
olive oil to coat large flat pan
200 grams mixed salad greens
2 medium tomatoes, sliced
1 medium mango, diced
1 small red chili, chopped
1/2 teaspoon lime rind, grated
1/4 cup lime juice
1/2 teaspoon sugar
Directions:
Coat chicken in combined pepper, seeds, herbs, and salt. Heat large flat pan, brush it with olive oil, add chicken, cook until browned on both sides and tender. Allow to cool then slice chicken diagonally.
Meanwhile, blend or process all remaining ingredients (except salad greens and tomatoes) until smooth.
Place salad leaves in bowl top with chicken and tomatoes; drizzle with mango chili dressing.
