Ingredients:
2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon cinnamon
1 teaspoon sweet paprika
2 teaspoons coriander2 teaspoons cumin seeds
1 1/2 kg cooked chickpeas, drained
1 Kg small tomatoes, chopped
2 tablespoons tomato paste
1/4 cup dates, chopped
1 cup water
1/4 cup coriander, chopped
2 tablespoons mint, chopped
500 grams spinach, chopped
Directions
Heat oil in pan, add onion, garlic and spices, cook, stirring, until
onion is soft .
Stir in chickpeas, tomatoes, paste and dates;
then water and herbs, simmer, covered, for about 10 minutes.
Stir in spinach; simmer for another 5 minutes
or until just wilted. Serve hot.
