Cold Curry Soup
Spicy curry soup with onion, yogurt and croutons, served cold.

Ingredients:
1 small onion, chopped

1 clove garlic, minced

1 tablespoon olive oil

1 teaspoon curry powder

1/2 teaspoon turmeric

1 liter vegetable stock

1 cup yogurt

salt and freshly ground black pepper, to taste

1/2 cup chopped parsley

1 cup croutons

Directions:
Saut
é onion and garlic in heated olive oil. Add curry powder and turmeric and fry for a few minutes more.
Add stock, heat and simmer for a few minutes. Allow to cool thoroughly before refrigerating for 2 hours.
Add yogurt, salt pepper and parsley. Place croutons in the soup bowls just before serving.

Pour soup over and serve immediately.
