Ingredients:
1 tablespoon olive oil
850 grams chicken breast
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup mango chutney
2 tablespoons curry powder
300 grams white seedless grapes
2 cup walnuts, chopped
125 grams snow pea sprouts
Directions:
Heat oil in large pan; cook chicken, in batches, until browned on both sides.
Place chicken in shallow medium baking dish; cover, bake in moderate oven for about 20 minutes or until cooked through. Cool for 10 minutes; dice.
Place mayonnaise, sour cream, chutney and curry powder in small bowl; whisk until smooth.
Remove grapes from stems.
Gently toss chicken with grapes, nuts and mayonnaise mixture in large bowl; serve with snow pea sprouts.
