Ingredients
300 grams cake flour
3 teaspoons baking powder
1/2 cup whole-wheat flour
1/2 cup fresh herbs (dill, parsley, sage or marjoram), chopped
1/2 cup onion, chopped
1 teaspoon dill or mustard seed
250 grams Cottage cheese
350 ml milk
2 tablespoons butter, melted
1 teaspoon salt
1/2 teaspoon hot sauce
Directions:
Sift flour and baking powder together and add whole-wheat flour, herbs,
chopped onion and dill or mustard seed. Add Cottage cheese, mixing it in with a
knife.
Combine the milk and melted butter and add to
the flour mixture. Mix to a soft scone-like consistency. Add a little more milk
if necessary. Season with salt and Tabasco sauce.
Turn into a 25 x 10cm loaf tin and bake at
180ºC (Gas mark 4) for 60-75 minutes or until a skewer comes out clean when
inserted into the center of the loaf. Serve while hot.
