Ingredients:
400 grams white fish fillets
200 grams medium prawns
1 tablespoon peanut oil
2 small red chilies, chopped
4cm stalk lemon grass, chopped
2 cloves garlic, minced
100 grams snow peas, sliced
1-2 tablespoons fish sauce
6 spring onions, sliced
1/4 cup basil, chopped
2 tablespoons coriander, chopped
Directions:
Cut fish into small cubes. Peel and devein prawns, leaving tails intact.
Heat oil in heavy-based pan or wok; add chopped chili, fish, lemon grass,
garlic and snow peas. Stir-fry over medium heat for 2 minutes or until fish is
almost cooked. Add prawns; stir-fry for another 2 minutes or until prawns are
pink.
Add sauce, onions, basil and coriander;
stir-fry 1 minute. Serve immediately.
