Ingredients:
2 cups lentils, cooked
1/2 cup celery, sliced
8 oz can tomato sauce
4 medium potatoes, cooked and mashed
1 medium onion, chopped
2 garlic cloves, minced
2 tablespoons Parmesan Cheese, grated
olive oil
Mixed herbs (basil, oregano, parsley)
Directions:
Preheat oven to 350 degrees. Sauté onion, celery, and garlic in a little olive oil. Add lentils and tomato sauce and cook 15 minutes. Pour into a baking pan and cover mashed potatoes. Sprinkle Parmesan cheese on top of potatoes, grill until golden. Top with your favorite herbs.
