Meatball, Bean and Macaroni Soup
Italian meatballs served in a potato, carrot, kidney bean and macaroni soup.

Ingredients:
500g minced steak
1 cup fresh breadcrumbs
1/3 cup tomato paste
2 teaspoons dried oregano
olive oil for shallow frying
2 liters chicken stock
2 onions, chopped
2 potatoes, diced
2 carrots, diced
1/2 cup small macaroni
1 cup shelled green peas
1 can red kidney beans, drained

Directions:
Combine mince, breadcrumbs, tomato paste and oregano. Roll heaped teaspoonfuls of mixture into balls. Heat oil in frying pan. Add meatballs and fry gently on all sides until golden brown and cooked. Combine stock, onions, potatoes and carrots in pan and bring to boil. Add macaroni cover and simmer for 10 minutes or until vegetables and macaroni are tender.
Add meatballs, peas and kidney beans. Simmer for 5 minutes. Serve hot.
