Porridge with Fruits
Traditional porridge served with apricot-honey compote.

Ingredients:
1 cup dried apricots
2 tablespoons honey
1 cup (250 ml) water
1 cinnamon stick
1 tablespoon lemon rind, grated
1 cup fresh dates
2 1/4 cups oats
6 cups milk
1 tablespoon almonds, toasted, flaked

Directions:
Combine apricots, honey, water, cinnamon and rind in small pan; bring to boil. Simmer, uncovered for about 5 minutes or until syrup has thickened slightly; cool.
Cut dates in half lengthways, discard stones; add dates to apricot mixture. Combine oats and milk in medium pan; cook, stirring for about 10 minutes or until mixture thickens.
Drain fruit over large bowl; reserve syrup. Spoon porridge into bowls; top with apricots, dates and nuts, drizzle with syrup.
