Ingredients:
500 grams mixed berries (bilberries, blueberries,
cherries, blackcurrants or cranberries)
500 ml water
zest of 1 lemon
1 cinnamon stick
2 cloves
honey
4 teaspoon cème fraiche or sour cream
Directions:
Remove any stalks or pits from the fresh fruit and
rinse gently under running water. Leave to drain. Frozen berries can be used
straight from the freezer.
In a large pan, heat the
water with the zest, cinnamon and cloves and simmer for about 10 minutes.
Discard the spices, retain the zest and add the fruit.
Cook the fruit for 3-10
minutes or until just soft. Puree the soup in a blender or food process until
smooth. Chill for 2 hours before serving.
After 1 hour, add the honey
to taste. The soup should have a tart flavor. Garnish each serving with a swirl
of cème fraiche or sour cream.
