Ingredients:
6 eggs, beaten
1 tablespoon chives, chopped
1/2 cup milk
1/2 cup cream
1 tablespoon basil, chopped
1 tablespoon dill, chopped
1 tablespoon lemon rind, grated
210g canned red or pink salmon
100g Camembert, sliced
Directions:
Whisk eggs, chives, milk, cream, basil, dill and rind in large bowl. Lightly mash salmon; stir into egg mixture.
Pour mixture into a lightly greased frying pan. Cook over low heat for 10-15 minutes or until almost set.
Preheat grill. Top frittata with slices of Camembert. Place under preheated hot grill for 2-3 minutes or until Camembert has melted and frittata is golden.
